For the Dressing:

  • ¼ cup creamy peanut butter
  • 2 tbsp lime juice
  • ½ tsp soy sauce
  • 1 tbsp rice vinegar
  • ½ tsp fish sauce
  • 2 tbsp honey
  • 1 garlic clove, minced
  • ½ tsp minced ginger
  • ¾ tsp salt
  • ¼ tsp crushed red pepper flakes
  • 1 tbsp chopped cilantro
  • ½ tsp sesame oil
  • 2 tbsp avocado oil

For the Salad:

  • 7 cups shredded cabbage (1 small cabbage)
  • 1 cup shredded carrots (about 2 medium carrots)
  • 1 small English or Persian cucumber thinly sliced
  • 2 scallions, thinly sliced

For Garnish:

  • Chopped cashews
  • Chopped cilantro


  • Whisk together all the dressing ingredients in a small bowl. Set aside.
  • For the salad, combine all the ingredients in a large bowl and toss to combine. Add the salad dressing and toss again.
  • Top with chopped cashews and chopped cilantro


Note: If you will not be eating the salad right away, wait to add the dressing or it will get soggy.
