30 Minute Cream of Tomato Soup

This recipe for tomato soup is so easy, and uses simple ingredients. In fact, all you need is six ingredients!  It’s a delicious and easy tomato soup recipe that can be on your dinner table in 30 minutes.

Ingredients

  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 small onion, diced
  • 28 oz whole peeled San Marzano tomatoes
  • 1 tbsp fresh chopped basil
  • ¾ tsp salt, or more to taste
  • 4 oz heavy cream
  • 1 tbsp butter, cold

Instructions

  • Sweat the onions in the oil and butter in a heavy saucepan without caramelizing. Let cool slightly before adding the tomatoes.
  • Using an immersion blender, purée the onions, tomatoes and basil.
  • Return to heat bring to a boil, then lower to a simmer. Add salt and simmer for 20 minutes.
  • Adjust the seasonings and finish with heavy cream (*see note) and cold butter.

Notes

Temper the cream by adding some of the hot soup to the cream, and then adding it into the pot of soup. This will prevent the cream from curdling
