Ingredients
  

  • 4 mini seedless cucumbers sliced
  • 1 cup cherry tomatoes halved
  • 1 15- ounce can chickpeas rinsed and drained
  • ½ red onion thinly sliced
  • 1 tsp garlic salt
  • 1 tsp 21 seasoning trader joes
  • ½ cup crumbled feta
  • 1 lb NY strip steak

For the Chimichurri:

  • ¼ cup chopped parsley
  • ¼ cup chopped cilantro
  • 3 tbsp red wine vinegar
  • 2 garlic cloves minced
  • ½ tsp dried oregano
  • ½ tsp crushed red pepper
  • ¼ tsp sea salt
  • ¼ tsp black pepper
  • ½ cup extra-virgin olive oil

Instructions
 

  • Prepare the cucumbers chickpeas, tomatoes and onion and place in a large bowl. Set aside.
  • Season both sides of the steak with garlic salt and 21 seasoning salute.
  • Heat a large cast iron skillet over high heat and add 1 tsp avocado oil.
  • Sear the steak on one side for about 4 minutes. Flip, lower the flame to medium and cook for another 3-4 minutes or until the steak is cooked to your liking.
  • Remove the steak from the pan and let rest before cutting.
  • Meanwhile make the chimichurri. In a medium sized bowl, whisk together all the chimichurri ingredients except for the olive oil.
  • Slowly drizzle the olive in as you whisk until it is combined.
  • Slice the steak against the grain.
  • Pour ¾ of the chimichurri dressing over the salad and toss until everything is evenly coated.
  • Gently stir in the feta. Taste and adjust the seasoning, if needed.
  • Top with sliced steak and serve immediately.
