These Vegan + Gluten Free Banana Almond Breakfast Cookies are a delicious and healthy way to start your day! They're made with whole, unprocessed ingredients, plus they're easy to make and can be customized to your liking. If you are pressed for time on most mornings like I am, you can whip up a big batch of these a weekend and freeze them. Then just pop them in the microwave for a few seconds and they taste like they were freshly baked! Of course, these breakfast cookies aren’t just for breakfast. Gluten-Free Orange Cranberry Breakfast Cookies

  • 2 ripe bananas mashed
  • 1/3 cup creamy almond butter
  • 2 tablespoons maple syrup
  • ½ teaspoon almond extract
  • 1 ½ cups oats
  • ½ teaspoon cinnamon
  • ¼ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon sea salt


  • Preheat oven to 350 degrees. Line a sheet pan with parchment paper.
  • Mix together the mashed banana almond butter, maple syrup and almond extract until combined.
  • Add the oats, cinnamon, baking powder, baking soda and salt. Stir until incorporated.
  • Use a portion scoop or ¼ cup measuring cup to scoop 12-14 cookies onto the prepared sheet pan,.Press down each cookie to flatten slightly.
  • Bake10-12 minutes.
  • Cool and remove from sheet pan.
  • Once fully cooled, you can store these in an airtight container at room temperature for 2-3 days.
