  • 2 tbsp olive oil
  • 1 yellow onion diced
  • 1 lb ground turkey
  • 2 ½ tsp sea salt
  • 1 tbsp chili powder
  • 2 ½ tsp cumin
  • 1 ½ tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1 bay leaf
  • 1 28 ounce can crushed fire roasted tomatoes
  • 1 can kidney beans drained and rinsed
  • 1 can pinto beans drained and rinsed
  • 1 cup water
  • 2 tsp tomato paste

Instructions
 

  • In a large pot or deep pan, heat olive oil over medium heat. Add the diced onion and sauté until the onion is soft and translucent, about 4 minutes. Add the garlic and saute for another 2 minutes, stirring often.
  • Add the ground turkey, chili powder, cumin, oregano, garlic powder, onion powder, salt and bay leaf to the pot, breaking up the turkey, while incorporating the spices with a wooden spoon. Cook until the turkey is golden and cooked through, about 5-7 minutes.
  • Pour in the crushed tomatoes, kidney beans, pinto beans and water. Stir everything together to combine and bring to a simmer.
  • Let the chili simmer covered for 15-20 minutes, stirring occasionally.
  • Taste the chili and adjust seasoning as needed.
  • Ladle the chili into bowls and top with shredded cheese, sour cream, avocado slices, cilantro, and a squeeze of lime if desired. Serve with tortilla chips for a complete meal!
