Ingredients
- 2 tbsp olive oil
- 1 yellow onion diced
- 1 lb ground turkey
- 2 ½ tsp sea salt
- 1 tbsp chili powder
- 2 ½ tsp cumin
- 1 ½ tsp onion powder
- 1 tsp garlic powder
- 1 tsp oregano
- 1 bay leaf
- 1 28 ounce can crushed fire roasted tomatoes
- 1 can kidney beans drained and rinsed
- 1 can pinto beans drained and rinsed
- 1 cup water
- 2 tsp tomato paste
- Optional toppings: tortilla chips shredded cheese sour cream, avocado, cilantro, lime wedges
Instructions
- In a large pot or deep pan, heat olive oil over medium heat. Add the diced onion and sauté until the onion is soft and translucent, about 4 minutes. Add the garlic and saute for another 2 minutes, stirring often.
- Add the ground turkey, chili powder, cumin, oregano, garlic powder, onion powder, salt and bay leaf to the pot, breaking up the turkey, while incorporating the spices with a wooden spoon. Cook until the turkey is golden and cooked through, about 5-7 minutes.
- Pour in the crushed tomatoes, kidney beans, pinto beans and water. Stir everything together to combine and bring to a simmer.
- Let the chili simmer covered for 15-20 minutes, stirring occasionally.
