Thai Ground Pork Bowls

Ingredients
  

For the Pork:

  • 2 tsp avocado oil
  • ½ white onion, finely diced
  • 1 pound ground pork
  • 2 tsp minced ginger
  • 3 cloves minced garlic
  • 2 tbsp soy sauce
  • 2 tsp mirin (sweet rice wine)
  • ¼ tsp toasted sesame oil
  • ¼ tsp salt
  • ½ tsp rice vinegar
  • ¼ tsp fish sauce (optional)

For the Rice:

  • 1 ½ cups jasmine rice
  • 2 ¼ cup water
  • ¾ tsp salt

For Serving:

  • Bibb or butter lettuce leaves
  • English or Persian cucumber, sliced in rounds
  • 1 carrot, sliced in ¼ inch strips
  • 1 small sweet red pepper, sliced in ¼ inch strips
  • Sesame Seeds
  • 1 tbsp chopped cilantro
  • Lime wedges for serving

Instructions
 

  • Add all the ingredients for the rice to a rice cooker or small pot. Turn rice cooker on, or bring pot up to a boil, then lower to a low flame, cover and cook for 20 minutes until done.
  • Heat a large skillet over medium high heat.
  • Add the avocado oil and sauté the onion until it becomes translucent, about 3 minutes.
  • Add the pork, ginger and garlic, and cook for about 6-8 minutes, or until pork is no longer pink, breaking the pork up into crumbles. Drain any excess fat.
  • Stir in soy sauce, mirin, sesame oil, salt, rice vinegar and fish sauce. Cook for another minute, and turn off the flame.
  • To serve, place rice in a bowl and top with the pork mixture. Add veggies and garnish with sesame seeds, cilantro and lime wedge.
  • Finish these off with a squeeze of fresh lime juice.
