Ingredients
For the Pork:
- 2 tsp avocado oil
- ½ white onion, finely diced
- 1 pound ground pork
- 2 tsp minced ginger
- 3 cloves minced garlic
- 2 tbsp soy sauce
- 2 tsp mirin (sweet rice wine)
- ¼ tsp toasted sesame oil
- ¼ tsp salt
- ½ tsp rice vinegar
- ¼ tsp fish sauce (optional)
For the Rice:
- 1 ½ cups jasmine rice
- 2 ¼ cup water
- ¾ tsp salt
For Serving:
- Bibb or butter lettuce leaves
- English or Persian cucumber, sliced in rounds
- 1 carrot, sliced in ¼ inch strips
- 1 small sweet red pepper, sliced in ¼ inch strips
- Sesame Seeds
- 1 tbsp chopped cilantro
- Lime wedges for serving
Instructions
- Add all the ingredients for the rice to a rice cooker or small pot. Turn rice cooker on, or bring pot up to a boil, then lower to a low flame, cover and cook for 20 minutes until done.
- Heat a large skillet over medium high heat.
- Add the avocado oil and sauté the onion until it becomes translucent, about 3 minutes.
- Add the pork, ginger and garlic, and cook for about 6-8 minutes, or until pork is no longer pink, breaking the pork up into crumbles. Drain any excess fat.
- Stir in soy sauce, mirin, sesame oil, salt, rice vinegar and fish sauce. Cook for another minute, and turn off the flame.
- To serve, place rice in a bowl and top with the pork mixture. Add veggies and garnish with sesame seeds, cilantro and lime wedge.
- Finish these off with a squeeze of fresh lime juice.
