Add all the ingredients for the rice to a rice cooker or small pot. Turn rice cooker on, or bring pot up to a boil, then lower to a low flame, cover and cook for 20 minutes until done.
Heat a large skillet over medium high heat.
Add the avocado oil and sauté the onion until it becomes translucent, about 3 minutes.
Add the pork, ginger and garlic, and cook for about 6-8 minutes, or until pork is no longer pink, breaking the pork up into crumbles. Drain any excess fat.
Stir in soy sauce, mirin, sesame oil, salt, rice vinegar and fish sauce. Cook for another minute, and turn off the flame.
To serve, place rice in a bowl and top with the pork mixture. Add veggies and garnish with sesame seeds, cilantro and lime wedge.
Finish these off with a squeeze of fresh lime juice.
