Thai Grilled Shrimp
Summer is the perfect time to enjoy grilled food, and Thai Grilled Shrimp is a delicious and easy option that is sure to please! The shrimp are marinated in a flavorful mixture of coconut milk and Thai spices, then grilled until they are cooked through and tender. They are perfect served with rice, noodles, or a salad.
Tips:
- If you don't have a grill, you can cook the shrimp in a pan on the stovetop.
- You can add other vegetables to the marinade, such as zucchini, bell peppers, or onions.

Citrus Adobo Grilled Shrimp

Ingredients
  

  • ¾ cup full fat coconut milk
  • 6 stems cilantro
  • 2 tablespoons soy sauce
  • 3 cloves garlic, minced
  • 1 tsp curry powder
  • 1 tsp freshly grated ginger
  • 1 tsp brown sugar
  • ½ tsp fish sauce (optional)
  • juice from ½ lime
  • ¾ tsp sea salt
  • 1 ½ lbs peeled and deveined shrimp
  • 1 tbsp vegetable oil
  • Bamboo skewers (optional)

Instructions
 

  • Add all ingredients except for the shrimp to a large bowl and mix until combined. Then add the shrimp and coat it in the sauce.
  • Marinate for 20 minutes.
  • Thread 3-4 shrimp on each bamboo skewer (optional).
  • To Cook on Grill
  • Preheat grill to 400 degrees.
  • Oil the grill lightly, and then put the skewers (or just the shrimp if large enough) onto the grill.
  • Cook the shrimp for about 3 minutes on each side, or until fully cooked.
  • To Cook in the Oven:
  • Preheat oven to 400 degrees.
  • Line a sheet pan with parchment paper. Lay the skewers in a single layer on the sheet pans, or just spread the shrimp in a single layer.
  • Bake for 7-9 minutes until fully cooked.
