Strawberry Chocolate Chip Granola Bars

These super simple strawberry chocolate chip granola bars are soft, chewy and really easy to make. They are perfect for a healthy on-the-go breakfast, post workout snack or lunchbox treat. I love how these granola bars are made with simple and easy to find ingredients and are gluten free, refined sugar free and vegan.

Ingredients
  

  • 2 cups rolled oats
  • ¼ cup almond meal
  • 3/4 cup almond butter (or nut butter of your choice)
  • ¼ cup honey, maple or agave syrup
  • 1 tsp vanilla extract
  • ½ tsp sea salt
  • ¼ cup freeze-dried strawberries crushed into smaller pieces
  • ¼ cup semi-sweet chocolate chips
  • 1 tbsp mini white chocolate chips

Instructions
 

  • Preheat oven to 350℉.
  • Spread oats in an even layer onto a baking sheet pan — bake for 5-10 minutes, or until lightly toasted.
  • While the oats are in the oven, combine the almond butter, honey, vanilla, and salt in a medium-sized bowl. Mix until smooth.
  • Next, stir the toasted oats and almond meal into the almond butter mixture until well-combined.
  • Fold in the freeze-dried strawberries, chocolate chips and mini white chocolate chips.
  • Line an 8x8 baking pan with parchment paper and spread it out into an even layer.
  • Chill in the fridge for ~20-30 minutes, until firm.
  • Once set, remove from the fridge, lift parchment out of the pan and cut into equal sized bars.
  • Store in the fridge.
