Ingredients
  

For the Salmon + Broccoli:

  • 1 ½ lbs salmon skin removed and cut into 2 inch chunks
  • 1 head broccoli cut into florets
  • 3 tbsp miso paste
  • ¼ cup coconut aminos
  • 1 tsp toasted sesame oil
  • 3 garlic cloves grated
  • 1 tsp grated ginger
  • ½ tsp sea salt plus more for sprinkling on top
  • 1 tablespoon extra virgin olive oil

For the Bowls:

  • 2 cups cooked jasmine rice brown rice, or quinoa
  • 1 tablespoon sesame seeds
  • Sliced scallions

Instructions
 

  • Preheat the oven to 375 degrees F. Line a sheet pan with parchment paper.
  • In a small bowl, whisk together the miso paste, coconut aminos, sesame oil, garlic, ginger and salt until smooth.
  • Place the broccoli florets on the sheet pan and drizzle with 2 tablespoons of the miso mixture. Drizzle with 1 tablespoon olive oil and toss with your hands to combine.
  • Next place the salmon chunks on the other side of the sheet pan and pour remaining miso mixture over the salmon. Gently coat the salmon in the sauce.
  • Season the salmon pieces with ½ teaspoon sea salt.
  • Bake for 10 minutes and then broil for 3-5 minutes until the salmon is cooked and golden to your liking.
  • Remove from the oven, sprinkle with sesame seeds and chopped scallions. Assemble your bowls as you like and enjoy!
