Ingredients
- 1 lb salmon, cut into 4 (4 oz) portions
- 1 tsp avocado or olive oil
- 1 tsp salt
- ¾ cup orange marmalade
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp Dijon mustard
- ¼ tsp crushed red pepper
Instructions
- Preheat oven to 400°F. Rub salmon with 1 tsp of the oil, and place on a parchment lined sheet pan. Sprinkle with 1 tsp of the salt.
- Bake for 7-9 minutes, until it is almost fully cooked (this will depend in the size and thickness of the salmon)
- Meanwhile, stir together marmalade, soy sauce, vinegar and sesame oil in a small saucepan. Bring to a simmer over medium, and cook, stirring often, until slightly thickened and reduced to about ½ cup, about 6 minutes. Set aside.
- Put the broiler on and remove the salmon from the oven, brush marmalade mixture on the top and sides of the salmon.
- Broil until the salmon is and glazed, about 3 minutes.
