S'mores Cookie Cake

This decadent dessert is made with a chewy cookie base, filled with gooey marshmallows and melted chocolate.   • 8 tablespoons 1 stick salted butter, softened
  • ¾ cup packed light brown sugar
  • ¼ cup granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • ¾ teaspoon sea salt
  • ¾ teaspoon baking soda
  • ½ cup semi-sweet chocolate chips
  • 1 cup mini marshmallows
  • 1 hershey’s bar, optional, for topping
  • ¼ cup broken graham crackers, optional, for topping


  • Place the oven rack in the middle of the oven, and preheat the oven to 350 F. Coat a 9-inch round cake pan with cooking spray, then line the bottom with parchment paper.
  • Add the softened butter to the bowl of a stand mixer fitted with the paddle attachment.
  • Add the brown sugar and granulated sugar to the bowl of butter. Beat on medium-high speed until light and fluffy, about 2 to 3 minutes. Beat in the eggs, one at a time, waiting until the first one is fully incorporated before adding the second.
  • Add the vanilla extract, and mix until incorporated.
  • In a medium bowl, whisk together the flour, salt and baking soda. Add to the mixer, and beat on low until incorporated, about 1 to 2 minutes.
  • Remove the paddle attachment, and stir in the chocolate chips and marshmallows, mixing by hand.
  • Transfer the dough to the prepared baking pan, and press it into an even layer with your hands. If the dough is too sticky, lightly coat your hands with cooking spray.
  • Place pieces of Hershey bar and graham crackers pieces around the top of the cookie cake.
  • Bake until the top is lightly golden, 20 to 25 minutes. Place the pan on a wire rack, and let the cookie cool completely in the pan.
  • Once completely cooled, remove the cookie cake from the pan by flipping it onto a large cutting board or plate. Remove the parchment paper, and place it on a cake stand or large plate.
