This recipe takes your favorite juicy dumpling filling, smashed on to a crispy and flaky flour tortilla, creating a unique and delicious experience. My kids go crazy when I make dumplings…but they are time consuming to make! So when I saw Dished by Kate’s Smash Dumpling Taco recipe, I knew I had to try it out…..but with my version of course. This recipe is also versatile so you can swap out the ground pork for ground chicken or beef.

Ingredients
  

  • 1 lb ground pork
  • 3 scallions chopped
  • 1 inch of fresh ginger minced
  • 5 garlic cloves minced
  • 1 tsp rice vinegar
  • 1 tsp mirin optional
  • 2 tbsp soy sauce
  • ¼ tsp sea salt
  • Avocado or vegetable oil for cooking
  • 8 SMALL 4 inch flour tortillas**

Instructions
 

  • In a large bowl, combine the ground pork, scallions, ginger, garlic rice vinegar, mirin, soy sauce and salt. Use your hands to mix all the ingredients thoroughly together. Set aside.
  • Spoon 3-4 tablespoons of the pork mixture onto each tortilla, and use a spoon to spread it into a thin layer all the way to the edge of the tortilla.
  • Heat a large skillet over medium-high heat. Add 1 teaspoon of avocado oil.
  • Place a prepared tortilla, dumpling mixture side down, onto the pan and press the tortilla into the pan.
  • Cook for 3-4 minutes, then flip (be sure to use a large spatula so you can get under all the meat so it doesn’t stick to the pan.
  • Cook for another minute, to crisp up the other side of the tortilla.
  • Remove from the pan, then repeat with the rest of the tortillas.
  • Serve garnished with sliced scallions and alongside your favorite dipping sauce (I used ponzu)

Notes

** ** this is important or you won't be able to get your spatula under the whole tortilla to flip it without marking a mess!
