Sheet Pan Steak Fajitas

Sheet Pan Steak Fajitas are the perfect simple and healthy weeknight meal when you don’t have much time and you want something easy! Tender sirloin steak is tossed with lots of seasonings, onions and colorful peppers and cooked together on one sheet pan. This recipe can be on the tables in 25 minutes and is also customizable to everyone’s preferences which makes it a great meal for families. For some more of my easy sheet pan meals, check these out:

Ingredients
  

  • 1 ½ lb sirloin steak, cut into thin strips
  • 1 tbsp adobo
  • ½ tsp cumin
  • ½ tsp chili powder
  • 1 tsp salt
  • 2 cloves garlic minced on microplane
  • 3 tbsp olive oil
  • 1 red bell pepper cut into ¼ inch strips
  • 1 yellow bell pepper cut into ¼ inch strips
  • 1 green bell pepper cut into ¼ inch strips
  • 1 yellow onion cut into ¼ inch strips
  • 2 tbsp chopped fresh cilantro leaves, for garnish
  • Flour or corn tortillas, warmed
  • Limes, for serving
  • Optional toppings: shredded cheese, diced avocado, salsa, sour cream etc.

Instructions
 

  • Preheat oven to 400 degrees. Line a sheet pan with parchment paper and lightly oil it.
  • In a large bowl, combine adobo, cumin, chili powder, salt, minced garlic and oil.
  • Place steak strips in the bowl and gently toss to combine. Then add the peppers and onions and mix just until everything is incorporated. (This way, the steak gets most of the seasoning)
  • Spread the steak, onions and peppers onto the sheet pan and bake for 8-12 minutes, or until the steak is cooked to your liking, being sure not to overcook.
  • Garnish with lime juice and cilantro.
  • Serve with tortillas and toppings of your choice.
