Sheet Pan Roasted Veggies


You always need a simple roasted veggie recipe in your back pocket…right? So here it is…6 ingredients, a bowl and a sheet pan. You can also use whatever fall/winter veggies you have on hand, making this recipe so versatile. So maybe you’re wondering….what is Ras el hanout ? Roasted Fall Veggies with Aji Verde

  • 5 medium-sized red potatoes, diced (about 2 ½ cups)
  • 3 golden beets, diced (about 1 cup)
  • 1 fennel bulb, sliced along the grain ¼ inch thick
  • 3 tbsp olive oil
  • 1 tsp ras el hanout
  • 1 ½ tsp salt


  • Preheat oven to 375 degrees.
  • Line a sheet tray with parchment paper
  • In a large bowl, toss all the veggies with olive oil and spices.
  • Spread on the sheet tray and roast in the oven for about 25 minutes, or until the veggies begin to get golden.
