Ingredients
- ¼ cup pumpkin puree or one ripe banana, mashed
- 2 eggs
- 2 cups cottage cheese blended until smooth I use an immersion blender
- 2 tbsp maple syrup
- 2 tbsp water
- 2 cups birch benders protein pancake mix
- ½ tsp cinnamon
- 1 cup diced apples optional
Instructions
- Preheat the oven to 350 degrees F.
- Prepare an 10x14 inch casserole pan (or half sheet pan) with parchment paper.In a medium-sized bowl, mix together the pumpkin puree, eggs, cottage cheese and maple syrup.
- Use an immersion blender until smooth. Alternately, you can put the ingredients into a blender and blend until smooth and then transfer to a bowl.
- Add the pancake mix, cinnamon and water and mix just until combined.
- Fold in the apples.
- Bake for 25-30 minutes until the center is set and the top is golden.
- Allow to cool fully before cutting into squares.
