
Moroccan Salmon + Veggies is quick, easy and full of flavor. All you need is 6 ingredients, a small bowl and a sheet pan, and in 30 minutes you can have dinner on the table, making this great for busy weeknights or for meal prep. Ingredients
- 1 lb salmon, cut into 4 portions
- 4 carrots diced (about 3 cups)
- 2 large beets diced (about 3 cups)
- 3 tbsp olive oil
- 1 tsp ras el hanout
- 1 tsp salt
Instructions
- Preheat oven to 375 degrees.
- Line a sheet tray with parchment paper
- In a large bowl, toss all the veggies with olive oil and spices.
- Spread on the sheet pan and roast in the oven. Check the salmon after 10 minutes, and remove when cooked to your liking. Continue roasting the veggies for about 25 minutes, or until tender.
