Ingredients
  

  • 4 bone-in chicken thighs
  • 3 tablespoons extra virgin olive oil divided
  • 2 tablespoons lemon juice
  • 3 garlic cloves minced
  • 1 ½ teaspoons sea salt divided
  • 1 teaspoon dijon mustard
  • 2 teaspoons Italian seasoning divided
  • ½ teaspoon pepper
  • 1 large head broccoli cut into florets

Instructions
 

  • Preheat oven to 350 degrees F.
  • In a large bowl, mix together 2 tablespoons olive oil, lemon juice, garlic, 1 teaspoon salt, mustard, 1 teaspoon Italian seasoning and black pepper until fully combined.
  • Place the chicken thighs into the bowl and toss to coat fully.
  • Line a sheet pan with parchment paper and place the chicken on one side of the prepared sheet pan.
  • Bake for 30 minutes, remove from the oven and add the broccoli florets. Drizzle with 1 tablespoon olive oil ½ teaspoon sea salt and 1/2 teaspoon Italian seasoning. Toss so the broccoli is coated and return the sheet pan to the oven.
  • Bake for another 15 minutes until the broccoli is al dente.
  • Optional: broil for 2-3 minutes for a more golden finish.
