Preheat the oven to 375˚F. Line a sheet pan with parchment paper.
In a large bowl, mix together all the ingredients until well combined.
Spread the quinoa and chicken mixture onto the prepare sheet pan evenly. You may need to use two sheet pans depending on the size you have.
Bake in the oven until the rice is crispy around the edges and the chicken is cooked, about 15-20 minutes.
Divide the romaine, tomatoes, and cucumber among 4 bowls and drizzle with your favorite dressing. Top with the chicken + Quinoa.
Drizzle with tzatziki or yogurt sauce.
