Ingredients
  

  • 3 cups cooked quinoa
  • 1 ½ lbs boneless skinless chicken breasts, diced into ½ inch cubes
  • 1 ½ tsp garlic powder
  • ¾ teaspoon oregano
  • ¾ teaspoon paprika
  • 1 ½ teaspoon sea salt
  • ¾ teaspoon cumin
  • ¼ teaspoon black pepper
  • ¼ teaspoon dried thyme
  • 3 tablespoons extra virgin olive oil
  • Juice from ½ lemon
  • 2 cups chopped romaine lettuce
  • ½ cup chopped tomatoes
  • 1 persian cucumber,thinly sliced
  • tzatziki or any other yogurt sauce for drizzling (optional)

Instructions
 

  • Preheat the oven to 375˚F. Line a sheet pan with parchment paper.
  • In a large bowl, mix together all the ingredients until well combined.
  • Spread the quinoa and chicken mixture onto the prepare sheet pan evenly. You may need to use two sheet pans depending on the size you have.
  • Bake in the oven until the rice is crispy around the edges and the chicken is cooked, about 15-20 minutes.
  • Divide the romaine, tomatoes, and cucumber among 4 bowls and drizzle with your favorite dressing. Top with the chicken + Quinoa.
  • Drizzle with tzatziki or yogurt sauce.
