Ingredients
- 2 lbs chicken breast tenders
- ¼ cup extra virgin olive oil
- 1 tbsp lemon juice
- 2 tsp garlic salt
- 2 tsp Trader Joes Aglio Oilo seasoning
- 1 head broccoli cut into bite-sized florets
Instructions
- Preheat oven to 350 degrees F.
- In a small bowl, mix together the olive oil, lemon juice, garlic salt and aglio olio seasoning until fully combined.
- Line a sheet pan with parchment paper and place the broccoli florets on one side and the chicken tenders on the other side.
- Pour ¼ of the olive oil mixture over the broccoli and coat it with the mixture using your hands.(If you feel the broccoli needs more olive oil, drizzle a bit more on at this time.)
- Pour the remaining ¾ of the olive oil mixture over the chicken and spread it over both sides of the chicken with your hands.
- Bake for 15 minutes until the chicken is fully cooked and the broccoli is tender.
- Optional: broil for 2-3 minutes for a more golden finish.
- Serve as-is or with a baked sweet potato. You can also serve with quinoa, rice or pasta.
