Preheat the oven to 400˚F. Line a sheet pan with parchment paper.
In a large bowl, mix together all the ingredients until well combined.
Spread the rice and chicken mixture onto the prepare sheet pan evenly. You may need to use two sheet pans depending on the size you have.
Bake in the oven until the rice is crispy around the edges and the chicken is cooked, about 15-20 minutes.
Garnish with cilantro and serve with lime wedges.
