Ingredients
  

For the Potatoes:

  • 1 lb. small Yukon Gold or yellow potatoes, quartered (so they cook quickly)
  • 2 tbsp olive oil
  • ¾ tsp sea salt
  • 1 tsp chili powder

For the Salmon + String Beans:

  • 4 4-oz. skin-on salmon fillets
  • 2 tbsp extra-virgin olive oil
  • 1 tsp. chili powder
  • 1 tsp. garlic powder
  • 1 tsp. sea salt
  • 1 8-oz. package string beans

Instructions
 

  • Preheat oven to 400°F. Line a two sheet pans with parchment paper.
  • Arrange potatoes on one of the prepared sheet pan, and drizzle with 2 tablespoons olive oil, ¾ teaspoon sea salt and 1 teaspoon chili powder. Toss the combine.
  • Bake for 15 minutes, until the potatoes are fork-tender.
  • While the potatoes bake, prepare the salmon and string beans. In a small bowl, combine chili powder, garlic powder, 1 teaspoon salt and 2 tablespoons olive oil.
  • On the second prepared sheet pan, arrange salmon fillets in the center of the baking sheet, and green beans around the salmon in a single layer.
  • Rub the seasoning mixture mostly over the salmon, saving a little to spread onto the string beans.
  • Bake for 8-10 minutes, or until salmon is cooked to your liking.
  • Optional: Turn on broiler to high; broil until salmon is golden, about 2 minutes.
  • Serve immediately.
