  • 2 tbsp extra virgin olive oil
  • 1 tsp kosher salt
  • ½ tsp garlic powder
  • ½ tsp freshly ground black pepper
  • 2 lbs bone-in, skin-on chicken thighs
  • ¼ cup white wine
  • ¼ cup chicken broth
  • 1 lemon, sliced into ¼-inch rounds
  • 1 shallot, diced
  • 1 tbsp drained capers
  • 1 tbsp butter, diced
  • 2 tbsp finely chopped fresh parsley leaves, for garnish


  • Preheat oven to 450 degrees.
  • In a large bowl, combine the olive oil, salt, garlic powder and pepper. Toss the chicken in the bowl with the olive oil mixture.
  • Spread out the chicken in a single layer in a roasting pan
  • Pour the white wine and chicken broth around the chicken pieces, being sure not to get liquid on the chicken so the skin can get crispy. Place the chicken in the oven for 30 minutes.
  • Remove the chicken from the oven and add the lemon slices, garlic and capers in the sauce.
  • Place the chicken back into the oven for about 10 more minutes, until the chicken is cooked through. and the skin is crispy.
  • Remove from oven and transfer chicken onto a serving platter along with the pan juices all over the chicken. Serve and enjoy!
