  • 1 ½ lbs chicken thighs or breasts, diced into ½ inch cubes
  • 5 garlic cloves, minced
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1 ½ tsp salt
  • ¾ tsp cumin
  • ¼ tsp cinnamon
  • ¼ tsp black pepper
  • 3 tbsp olive oil (if you use chicken breast, add 1 more tbsp olive oil)
  • ½ lemon, zested and juiced
  • 4 naan or pita rounds
  • 2 cups chopped romaine lettuce
  • ½ cup chopped tomatoes
  • ¼ cup thinly sliced red onion
  • 1 persian cucumber, thinly sliced
  • tzatziki or any other yogurt sauce for drizzling (optional)


  • Preheat oven to 450 degrees F. Line a sheet pan with parchment paper. Set aside.
  • In a large bowl, whisk together the garlic, oregano, paprika, salt, cumin, cinnamon, pepper, olive oil, lemon juice and zest.
  • Place the diced chicken in the bowl and toss to combine.
  • Spread in a single layer on the prepared sheet pan.
  • Bake for 20 minutes, or until the chicken is completely cooked through,
  • To serve, warm pita/naan in oven, about 3-4 minutes. Top warmed naan with chicken, romaine lettuce, tomatoes, red onion, cucumber and tzatziki sauce.
