Ingredients
- 1 ½ lbs chicken thighs or breasts, diced into ½ inch cubes
- 5 garlic cloves, minced
- 1 tsp dried oregano
- 1 tsp paprika
- 1 ½ tsp salt
- ¾ tsp cumin
- ¼ tsp cinnamon
- ¼ tsp black pepper
- 3 tbsp olive oil (if you use chicken breast, add 1 more tbsp olive oil)
- ½ lemon, zested and juiced
- 4 naan or pita rounds
- 2 cups chopped romaine lettuce
- ½ cup chopped tomatoes
- ¼ cup thinly sliced red onion
- 1 persian cucumber, thinly sliced
- tzatziki or any other yogurt sauce for drizzling (optional)
Instructions
- Preheat oven to 450 degrees F. Line a sheet pan with parchment paper. Set aside.
- In a large bowl, whisk together the garlic, oregano, paprika, salt, cumin, cinnamon, pepper, olive oil, lemon juice and zest.
- Place the diced chicken in the bowl and toss to combine.
- Spread in a single layer on the prepared sheet pan.
- Bake for 20 minutes, or until the chicken is completely cooked through,
- To serve, warm pita/naan in oven, about 3-4 minutes. Top warmed naan with chicken, romaine lettuce, tomatoes, red onion, cucumber and tzatziki sauce.
