Sesame Ginger Glazed Butternut Squash

This is a great side dish with tons of flavor.  I love roasted butternut squash, and I wanted to create a recipe that would go with my Maple Soy Glazed Salmon. This recipe incorporates the natural sweetness of butternut squash with saltiness, tang and a punch from the ginger.

  • 1 medium butternut squash, peeled and diced (about 4 cups)
  • ½ tsp toasted sesame oil
  • 1 ½ tsp vegetable oil
  • ¼ tsp salt
  • 1 tbsp miso paste
  • 3 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1 tsp ginger, minced
  • 1 tbsp honey
  • Scallion, for garnish


  • Preheat the oven to 400 degrees.  Cut the squash in half, scoop out the seeds, and dice into cubes.. Toss with sesame and vegetable oil and sprinkle with ¼ tsp salt.
  • Place on a parchment lined sheet tray and roast in the oven for 20 minutes.
  • Meanwhile, whisk together miso, rice vinegar, soy sauce, ginger and honey. After 20 minutes, lower the oven temperature to 375 and pour the mixture over the butternut squash.   Mix it around on the sheet tray, returning to the oven for another 8-10 minutes until the squash is caramelized.
