Quinoa Chocolate Chip Coconut Muffins
Get out your blender and whip up these healthy and delicious quinoa blender muffins! They are gluten and dairy-free, and best of all, kid approved! Quinoa is an amazing grain that is highly nutritious. One cup of cooked quinoa has 8 grams of protein and 5 grams of fiber.   • 2 cups cooked quinoa (3/4 cup uncooked quinoa)
  • cup milk of your choice
  • 2 eggs
  • ¼ cup melted coconut oil
  • ¼ cup coconut sugar
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 tbsp chia seeds (optional)
  • cup chocolate chips
  • cup shredded unsweetened coconut


  • Preheat oven to 350 degrees. Line a muffin tin with paper liners.
  • Add the cooked, cooled quinoa, milk, eggs, coconut oil, coconut sugar, maple syrup, baking powder, baking soda and salt to a blender.
  • Blend until all the ingredients are combined.
  • Add the chia seeds, chocolate chips and coconut. Stir with a spoon.
  • Scoop batter into prepared muffin tins and bake for about 20 minutes until golden.
