Pasta with Green Sauce
If you love quick, easy + healthy pasta recipes, you have to try this recipe for Pasta with Green Sauce! This sauce is a vibrant green and packed full of spinach, and super creamy. It was a hit with my children because they loved how green the pasta was after being coated in the sauce. If you’ve ever tried Tallarin Verde, a Peruvian pasta dish, this is my spin on it.   • 1 lb pasta of choice
  • 2 tsp olive oil
  • 3 cloves garlic, minced
  • 1 10 oz bag spinach
  • 4 oz cream cheese
  • ¼ cup Parmesan cheese
  • ¼ cup cotija cheese
  • ½-1 cup pasta water
  • salt, to taste
  • pepper, to taste


  • Boil pasta according to package directions.
  • While pasta is cooking, add olive oil to large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until translucent. Do not get any browning on the garlic.
  • Add the spinach and cook until wilted. Set aside to cool.
  • Add cooled cooked spinach to a food processor with the cream cheese, Parmesan cheese, cotija cheese, ½ cup pasta water, salt and pepper to taste. Blend until sauce is formed.
  • Add the sauce and drained, cooked pasta back into skillet and toss.
  • Add additional pasta water if needed for the sauce to be a consistency of your liking.
  • Serve warm with extra grated Parmesan cheese.
