Preheat oven to 350°. Line a sheet pan with parchment paper and lightly grease it with ¼ tsp coconut oil.
In a large bowl, stir together oats, almond meal, protein powder, chia seeds, cinnamon and salt.
In a medium bowl, whisk together the almond milk, applesauce, honey, and vanilla.
Pour the wet ingredients into dry ingredients and stir until combined. Gently stir in raisins and chocolate chips.
Using a portion scoop, scoop the batter onto the prepared sheet pan, The batter will be wet, but still formable. Lightly press down the tops of each cookie.
Bake in preheated oven for 10-12 minutes until firm.
Remove from oven and let cool for 5-10 minutes.
If there are any leftover, store in an airtight storage container for up to a week in the fridge.
