Ingredients
  

  • ¼ tsp coconut oil
  • 1 ½ cups old fashioned rolled oats
  • ¾ cup almond meal
  • ½ cup vanilla protein powder
  • 2 Tablespoons chia seeds
  • 2 tsp ground cinnamon
  • ¼ teaspoon sea salt
  • ¾ cup unsweetened almond milk
  • ¼ cup unsweetened applesauce
  • 2 tbsp honey or maple syrup
  • 2 teaspoons vanilla extract
  • ¼ cup raisins
  • ¼ cup chocolate chips

Instructions
 

  • Preheat oven to 350°. Line a sheet pan with parchment paper and lightly grease it with ¼ tsp coconut oil.
  • In a large bowl, stir together oats, almond meal, protein powder, chia seeds, cinnamon and salt.
  • In a medium bowl, whisk together the almond milk, applesauce, honey, and vanilla.
  • Pour the wet ingredients into dry ingredients and stir until combined. Gently stir in raisins and chocolate chips.
  • Using a portion scoop, scoop the batter onto the prepared sheet pan, The batter will be wet, but still formable. Lightly press down the tops of each cookie.
  • Bake in preheated oven for 10-12 minutes until firm.
  • Remove from oven and let cool for 5-10 minutes.
  • If there are any leftover, store in an airtight storage container for up to a week in the fridge.
