  • 1 cup mashed ripe or defrosted frozen mango
  • 1/3 cup melted coconut oil
  • ¼ cup sugar
  • ¼ cup brown sugar
  • 1 large egg, room temperature
  • 1/3 cup almond milk, room temperature
  • 1 tsp vanilla extract
  • 1 ¾ cups all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ¾ cup chocolate chips (reserve some for topping)


  • Preheat oven to 350 degrees F and line mini muffin tins with liners.
  • In a medium-sized bowl, combine the mashed mango, coconut oil, sugars, egg, milk and vanilla and whisk until combined.
  • Sift the flour, baking powder, baking soda and salt into the wet mixture. Gently mix with a spatula just until combined.
  • Fold in most of the chocolate chips (you can reserve a few for the tops of the muffins.)
  • Use a portion scoop to fill the muffin liners about ¾ of the way.
  • Top each muffin with a few chocolate chips.
  • Bake on the upper baking rack for 15-18 minutes, until lightly golden.
  • Remove from the oven, and let them cool in the pan for 5 minutes and then transfer to a cooling rack until fully cooled.
