Ingredients

For the Chicken

  • 2 lbs boneless skinless chicken breast tenders
  • 3 tbsp extra virgin olive oil
  • 1 lemon zested + juiced reserve half for the bowls
  • 1 shallot minced
  • 1 ½ tsp garlic powder
  • 1 ½ tsp Italian seasoning
  • 1 ½ tsp lemon pepper
  • 2 tsp dijon mustard
  • 2 tsp sea salt

For the Bowls:

  • 12 oz snap peas cut into bite-sized pieces
  • 1 cup baby spinach
  • 3 tbsp extra virgin olive oil
  • Remaining juice and zest from ½ lemon
  • ½ tsp sea salt
  • ½ tsp lemon pepper
  • 1 cup uncooked orzo⁣
  • ½ cup crumbled feta or shaved parmesan cheese
  • Chopped basil optional for garnish

Instructions

  • Cook the orzo according to the package instructions. When it is done, drain it and set aside.
  • For the chicken: In a medium-sized bowl, mix together the olive oil, half the lemon juice and zest, minced garlic, garlic powder, Italian seasoning, lemon pepper, dijon mustard, and sea salt. Add the chicken and coat it in the sauce.
  • Allow the chicken to marinade while you prep the ingredients for the bowl.
  • In a medium bowl, whisk the olive oil, the remaining half of lemon juice and zest and ½ tsp sea salt. Add the snap peas and spinach and toss to coat. Set aside.
  • Heat a cast iron skillet over medium heat. Add 1 tsp olive oil and once hot, add the chicken and cook for 4-5 minutes per side, lowering the flame once you flip it.
  • If there is any remaining marinade, scrape it out and pour on top of the chicken in the pan (to reduce chance of burning.) Cover the chicken and allow the chicken to cook in it and absorb all the flavor.
  • Remove the chicken from the heat. Allow to rest before cutting.
  • Divide the orzo, snap pea and spinach mixture and chicken among four bowls. Sprinkle with feta cheese
  • Optional: garnish with the fresh basil and serve.
