White Balsamic Italian Dressing

Italian Dressing
This White Balsamic Italian Dressing is light & tangy with the perfect touch of sweetness. The fresh herbs add some zest and the parmesan cheese is optional, but adds the right amount of saltiness. If you like a classic balsamic vinaigrette and Italian dressing, this is the perfect mix of the two!
Prep Time 5 minutes
Cook Time 2 minutes
Servings 1.5 cups

  • 4 tbsp lemon juice
  • 2 tbsp white balsamic vinegar
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey or maple syrup
  • 1 clove garlic
  • 2 tsp Dijon mustard
  • ¼ tsp fresh thyme leaves
  • 2 tsp dried oregano
  • 1 tsp fresh parsley leaves
  • 2 tbsp grated parmesan cheese optional
  • ¼ tsp salt
  • ½ tsp freshly ground black pepper
  • ½ cup extra-virgin olive oil

  • Put all the ingredients (EXCEPT FOR THE OIL) into a bowl, whisking until they are combined.
  • Slowly add the oil as you continue whisking, until the dressing is emulsified. Taste and adjust seasonings, adding more salt and pepper if necessary. If using a small blender, you can use the same process as above.
  • Store salad dressing in a container with a tight-fitting lid (I like to use a mason jar). Allow to come to room temperature and shake well before using.

*You can use a small blender, like a magic bullet for this or you can use a bowl and a whisk*
