Easy Zucchini Muffins

  • ½ cup mashed ripe banana (about 1 large banana)
  • ½ cup finely grated zucchini
  • 1 tbsp freshly squeezed lemon juice
  • 1/3 cup butter, melted
  • ¼ cup sugar
  • ¼ cup brown sugar
  • 1 large egg, room temperature
  • 1/3 cup milk of choice, room temperature
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 ¾ cups all-purpose flour
  • ¾ cup chocolate chips


  • Preheat oven to 350 degrees F and line mini muffin tins with liners.
  • In a medium-sized bowl, mash the bananas and combine with the lemon juice. Stir in the zucchini (no need to strain it!)
  • Add the melted butter, sugars egg and milk to the banana mixture and whisk until combined. Set aside.
  • In another medium-sized bowl, whisk together the baking powder, baking soda, salt and flour. Then pour the wet banana mixture into the flour mixtures and gently mix with a spatula just until combined. Fold in the chocolate chips.
  • Use a portion scoop or 1 tablespoon measure to fill the muffin liners about ¾ of the way.
  • Bake on the upper baking rack for 15-18 minutes for standard muffins, until lightly golden.
  • Remove from the oven, and let them cool in the pan for 5 minutes and then transfer to a cooling rack until fully cooled.
