Place all ingredients except for chocolate chips in a blender and blend until completely smooth, about 30 seconds.
Using a ¼ cup measure, pour the batter into a 12-cube ice-cube tray. Add the chocolate chips (or other toppings into the batter and use a toothpick to stir them in.)
When you want to make pancakes, pop the batter out of the ice cube tray and cook!
Coat a large nonstick skillet or griddle with ghee and heat over medium heat. Place the cubes onto skillet, being sure to space them out. Cook until bubbles appear on the edges.
Flip and cook until golden brown.
