Ingredients
- 1 cup gluten-free rolled oats
- 1 tbsp maple syrup
- 1 medium banana
- 1 tsp vanilla extract
- 2 tsp baking powder
- 1 tsp cinnamon
- 2 large egg whites (or 1 egg)
- ½ cup cottage cheese
- 3 tbsp almond milk
- ¼ cup mix-ins of your choice (mini chocolate chips, blueberries, sliced bananas etc.)
Instructions
- Place all ingredients except for chocolate chips in a blender and blend until completely smooth, about 30 seconds.
- Using a ¼ cup measure, pour the batter into a 12-cube ice-cube tray. Add the chocolate chips (or other toppings into the batter and use a toothpick to stir them in.)
- Freeze overnight.
- When you want to make pancakes, pop the batter out of the ice cube tray and cook!
- Coat a large nonstick skillet or griddle with ghee and heat over medium heat. Place the cubes onto skillet, being sure to space them out. Cook until bubbles appear on the edges.
- Flip and cook until golden brown.
