Ingredients
  

  • 1 cup gluten-free rolled oats
  • 1 tbsp maple syrup
  • 1 medium banana
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 2 large egg whites (or 1 egg)
  • ½ cup cottage cheese
  • 3 tbsp almond milk
  • ¼ cup mix-ins of your choice (mini chocolate chips, blueberries, sliced bananas etc.)

Instructions
 

  • Place all ingredients except for chocolate chips in a blender and blend until completely smooth, about 30 seconds.
  • Using a ¼ cup measure, pour the batter into a 12-cube ice-cube tray. Add the chocolate chips (or other toppings into the batter and use a toothpick to stir them in.)
  • Freeze overnight.
  • When you want to make pancakes, pop the batter out of the ice cube tray and cook!
  • Coat a large nonstick skillet or griddle with ghee and heat over medium heat. Place the cubes onto skillet, being sure to space them out. Cook until bubbles appear on the edges.
  • Flip and cook until golden brown.
