Ingredients
For the Veggies:
- 2 large sweet potatoes diced into ½ inch cubes (about 3 cups)
- 4 large carrots cut into ½ inch pieces, (about 2 cups)
- 3 tbsp extra virgin olive oil
- 1 tsp sea salt
- 1 tsp paprika
- 1 tsp garlic powder
For the Salmon:
- 1 ½ lbs salmon skin removed and cut into 1 inch chunks
- ¼ cup whole grain mustard
- ¼ cup honey
- 2 tbsp dijon mustard
- 4 cloves garlic minced
- 1 tbsp fresh lemon juice
- 1 tbsp apple cider vinegar
- ¼ tsp paprika
- ½ tsp sea salt divided
For the Bowls:
- 4 cups baby arugula
Instructions
- Preheat the oven to 375 degrees. Line a sheet pan with parchment paper.
- Toss the diced sweet potatoes and carrots with olive oil, paprika, sea salt and garlic powder directly on the sheet pan. Be sure they are in a single layer.
- Bake for 15 minutes or until they are beginning to get fork tender.
- In the meantime, mix together the whole grain mustard, honey, dijon mustard, garlic, lemon juice, apple cider vinegar, paprika and salt in a medium-sized bowl.
- Remove ⅓ cup of the honey mustard sauce and set aside for later.
- Toss the salmon chunks in the remaining mixture and set aside until the veggies are tender.
- Now remove the veggies from the oven and add the salmon chunks in a single layer.
- Bake for an additional 10 minutes or until the salmon is cooked to your liking and the edges are golden. You can also broil for 2-3 minutes for an extra golden crust.
- To assemble the bowls, divide the arugula among 4 bowls. Drizzle with reserved honey mustard sauce. Top with roasted veggies and salmon chunks and enjoy!
