**Cook rice or quinoa so it is done by the time you are finished with the rest of this recipe.
Heat a large skillet over medium-high heat.
Add the ground beef and allow to brown a bit before breaking it up with a spatula.
Once the meat has started to brown, add the diced onions, salt, cumin, chili powder, onion powder and garlic powder. Mix thoroughly to combine.
Continue to cook until the onions are translucent.
Lower the heat to medium-low and add the water and apple cider vinegar. Stir and cook for a minute. Turn off the flame and set aside.
Assemble the taco bowls: Start with a bed of rice and then top with the ground beef mixture and your choice of toppings. I used corn, pico de gallo, avocado, bell peppers and chopped cilantro, but you can use whatever you like or have on hand!
