Ingredients
  

For the Taco Meat:

  • 1 lb ground beef or turkey
  • 1 small yellow onion, diced
  • 1 tsp salt
  • 1 tsp cumin
  • 1 tsp chili powder
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ¼ cup water
  • 1 teaspoon apple cider vinegar

For the Bowls:

  • 2 cups rice or quinoa
  • corn
  • coleslaw mix
  • sliced avocado
  • pico de gallo
  • shredded cheddar
  • chopped fresh cilantro

Instructions
 

  • **Cook rice or quinoa so it is done by the time you are finished with the rest of this recipe.
  • Heat a large skillet over medium-high heat.
  • Add the ground beef and allow to brown a bit before breaking it up with a spatula.
  • Once the meat has started to brown, add the diced onions, salt, cumin, chili powder, onion powder and garlic powder. Mix thoroughly to combine.
  • Continue to cook until the onions are translucent.
  • Lower the heat to medium-low and add the water and apple cider vinegar. Stir and cook for a minute. Turn off the flame and set aside.
  • Assemble the taco bowls: Start with a bed of rice and then top with the ground beef mixture and your choice of toppings. I used corn, pico de gallo, avocado, bell peppers and chopped cilantro, but you can use whatever you like or have on hand!
