Ground Beef Taco Casserole
This easy ground beef taco casserole has all the flavors of classic ground beef tacos all in one pan. The addition of pinto beans makes this meal stretch a bit further, making it budget-friendly. By keeping this casserole simple, it is so customizable so you can easily replace the ground beef with any ground meat. If you prefer a lighter option, try ground turkey, or if you prefer pork, use it! Serve this with a big fresh salad, taco shells or with tons of tortilla chips. Looking for more taco dishes? Ingredients
  

  • 1 tbsp olive oil
  • 1 medium red onion, diced
  • 1 lb ground beef
  • 1 tsp salt
  • ½ tsp cumin
  • 1 tsp chili powder
  • 1 15 ounce can pinto beans, drained and rinsed
  • 1 8 ounce can tomato sauce
  • ¼ cup water
  • ½ tsp chili powder
  • ½ tsp cumin
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¾ cup shredded cheddar cheese, or more to taste
  • Optional toppings: chopped lettuce, chopped tomatoes, diced avocado, tortilla chips, sour cream, cilantro

Instructions
 

  • Preheat the oven to 350℉.
  • In a cast-iron skillet (or oven-proof high-sided pan, heat the oil over medium-high heat until shimmering. Add the onion and cook until translucent, 2-3 minutes.
  • Push the onions to the outer edges of the pan and add the ground beef in the middle.
  • Let the beef cook without stirring, until golden brown on bottom, about 1-2 minutes and then add 1 tsp salt, ½ tsp cumin and 1 tsp chili powder and then break up into chunks. Continue to cook and crumble the ground beef until browned, incorporating onions as you cook through the ground beef, about 5 more minutes.
  • Reduce the heat to medium, add the beans, tomato sauce, water, chili powder, cumin, onion powder, garlic powder and salt and stir to combine.
