Grilled Chicken Parmesan
This lightened chicken Parmesan recipe is so quick and easy to make. It is oh-so cheesy and satisfying. You can serve this with pasta, or zucchini noodles and a nice big salad for a healthy meal. Although classic chicken parmesan is delicious, this lighter version is much quicker and doesn’t required an involved process of breading and frying. This makes for a much quicker dinner and much less to clean up! If you’re up for it, check out my recipe for 20-Minute Marinara Sauce, or you can use the store-bought kind to save time.

  • 2 lbs chicken tenders or thinly sliced chicken breast
  • 1 ½ tsp salt, or to taste
  • 2 tbsp olive oil
  • 6 oz fresh mozzarella
  • 2 cups marinara sauce
  • Grated Parmesan cheese, for serving


  • Preheat oven to 400°F.
  • Season the chicken on both sides with salt.
  • Heat a large pan on medium heat.
  • Add 2 tbsp olive oil until shimmering.
  • Place the chicken tenders in the pan (being sure not to crowd the pan).
  • Cook about 2 minutes on each side, until the chicken is lightly golden and cooked through.
  • Place about ¼ cup of marinara sauce in the bottom of a glass baking dish. Place the cooked chicken on top, then add a spoon of marinara on each piece of chicken, and some fresh mozzarella.
  • Bake for about 5 minutes or until cheese is melted.
  • Sprinkle with parmesan cheese and serve.
