Ingredients
- ½ cup plain Greek yogurt
- ½ cup packed fresh parsley leaves and tender stems
- ½ cup packed fresh cilantro leaves and tender stems
- 3 scallions
- 2 garlic cloves
- 1 tsp sea salt divided
- ¼ tsp crushed red pepper
- 1 lemons juiced
- 1 ½ lbs boneless skinless chicken thighs
- 2 tbsp extra virgin olive oil for cooking
- Lemon wedges optional, for serving
Instructions
- Using an immersion blender or food processor, add the yogurt, herbs, garlic , ½ tsp salt, crushed red pepper and lemon juice and process until smooth.
- Taste and adjust seasoning to your liking.
- Place the chicken thighs in a shallow dish and pour ½ cup of the dressing over the thighs. Toss them to coat in the dressing using a pair of tongs.
- Marinate for 20 minutes.
- Pour the remaining dressing in a mason jar or airtight container and place in the fridge for later.
To Cook on the Stove:
- In a large skillet, heat about 2 tablespoons extra virgin olive oil over medium-high heat until shimmering.
- Season the chicken with ½ tsp salt.
- Using a pair of tongs, shake off extra dressing from the chicken and place the chicken in a single layer in the heated pan.
- Cook for one side for about 5 minutes or until crispy and golden, then turn over and cook for another 3 to 5 minutes or until the chicken is fully cooked.
To Cook on the Grill:
- Heat your grill to medium-high, and carefully oil the grates.
- Place the chicken in a single layer over direct heat and cook for 5 minutes on one side, then turn over and cook for another 3 to 5 minutes or until the chicken is charred and cooked through.
To Cook in the Air-Fryer:
- Air Fryer Green Goddess Chicken: Cook at 375°F for 15–18 minutes
- To serve, arrange the chicken on a platter with lemon wedges and drizzle with the reserved green goddess dressing.
