Ingredients
  

  • 2 ripe bananas mashed
  • 3 eggs
  • ½ cup cottage cheese
  • 3 tbsp pure maple syrup
  • 2 tsp vanilla extract
  • 2 tbsp smooth almond butter
  • 2 ½ cups almond flour
  • 1 tsp baking soda
  • ¼ tsp sea salt
  • 2 tsp cinnamon
  • ½ cup chocolate chips

Instructions
 

  • Preheat oven to 350 degrees and line a loaf pan with parchment paper and spray or grease.
  • In a large bowl, mix together the bananas, eggs, cottage cheese, maple syrup, vanilla and almond butter until smooth
  • Mix in the almond flour, baking soda, salt and cinnamon until fully combined
  • Fold in the chocolate chips. Optional: Add about 2 tablespoons more on top of the batter.
  • Pour batter into loaf pan and bake in the oven for about 50 minutes, covering with foil after 30 minutes to prevent the top from browning too much.
  • Remove from oven once a toothpick comes out clean.
  • Allow the bread to cool fully then slice and enjoy!
