Ingredients
  

  • 1 tbsp olive oil
  • ¼ cup almond flour
  • 1 tbsp water
  • 1 lb ground turkey
  • 1 small yellow onion, diced
  • ¼ cup sundried tomatoes, drained and chopped
  • ½ cup pitted kalamata olives, chopped
  • ½ cup baby spinach, chopped
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/3 cup crumbled feta cheese, optional
  • ¾ tsp salt

Instructions
 

  • Preheat oven to 350 degrees. Line a sheet pan with parchment paper and spread 1 tablespoon olive oil on the parchment paper. Set aside.
  • Mix together the almond flour and water and set aside.
  • Then combine the turkey, onion, sundried tomatoes, olives, spinach m cheese, garlic powder, onions powder and feta cheese.
  • Using your hands, mix the ingredients together. Blend the bread crumb mixture into the meat mixture.
  • Be sure the mixture is cold. If it has warmed up a bit, place in the fridge for 10-15 minutes.
  • Shape into 2-inch balls.
  • Place the meatballs in a single layer on the prepared sheet pan.
  • Bake for 15-20 minutes, or until cooked to your liking.
