Gluten-Free Date + Double Chocolate Chunk Cookies
These date + chocolate chunk cookies are so fudgey and decadent…AND they are also gluten free + refined sugar-free. They are made in 10 minutes in the bowl of a food processor which makes things super easy! The dates and dried cherries give these cookies such a chewy texture, while adding sweetness without any added sugar! Ingredients
  

  • 1 cup medjool dates pits removed (about 12-16 large dates, tightly packed into measuring cup)
  • ½ cup dried cherries
  • ½ cup coconut oil at soft room temperature
  • 1 egg
  • 2 tsp vanilla extract
  • ½ tsp almond extract
  • ¼ cup + 1 tbsp cocoa powder
  • ¾ cup blanched almond flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 cup chocolate chunks

Instructions
 

  • Preheat oven to 350 degrees. Line two sheet pans with parchment paper.
  • Put dates, cherries and coconut oil into the bowl of a food processor and pulse until fully combined.
  • Add egg, vanilla and almond extract and process again to fully combine with the date mixture.
  • Add the cocoa powder, almond flour, baking powder, baking soda and salt and pulse just until incorporated.
  • Remove the blade from the food processor and use a rubber spatula to scrape down the sides of the bowl. Then fold in the chocolate chunks.
  • Chill in the refrigerator for 15-20 minutes.
  • Scoop the cookie dough onto the sheet pan using a portion scoop.
  • Slightly flatten each ball of cookie dough.
  • Bake for 8-10 minutes, or until cookies are slightly puffed up. They will still be a bit gooey, but they will firm up when they cool. Do not overbake these cookies or they will be very dry.
  • Let them cool on the pan for 5 minutes before transferring to a rack to cool completely.

    Hi! This looks amazing ~ I’m not a fan of cherries and don’t have dried fruit on hand either. Do you have a suggestion for substituting them with either dates or could I leave them out all together?

      Thank you for your comment. These cookies are one of my favorites! You can leave the cherries out all together, or add any other dried fruit or even nuts in their place. Let me know what you do and how they turn out!
