Ingredients
- 8 ounces shell pasta
- 2 lbs chicken breast tenders
- ¼ cup extra virgin olive oil
- 2 tbsp lemon juice
- ¼ cup shredded parmesan cheese
- 2 tsp garlic powder
- 2 tsp sea salt
- 1 tsp italian seasoning
- ¼ tsp black pepper
- 1 head broccoli cut into bite-sized florets
Instructions
- Cook shell pasta according to package directions and set aside.
- In a small bowl, mix together the olive oil, lemon juice, parmesan cheese, garlic powder, salt, Italian seasoning and black pepper until fully combined.
- Preheat oven to 350 degrees F.
- Line a sheet pan with parchment paper and place the broccoli florets on one side and the chicken tenders on the other side.
- Pour ¼ of the olive oil mixture over the broccoli and coat it with the mixture using your hands.(If you feel the broccoli needs more olive oil, drizzle a bit more on at this time.)
- Pour the remaining ¾ of the olive oil mixture over the chicken and spread it over both sides of the chicken with your hands.
- Bake for 15 minutes until the chicken is fully cooked and the broccoli is tender.
- Optional: broil for 2-3 minutes for a more golden finish.
- Pour the sauce from the pan into a liquid measuring cup and set aside (this has a ton of flavor and taste great drizzled over the pasta!)
