
Garlic-Cilantro Sheet Pan Chicken is the perfect simple and healthy weeknight meal when you don’t have much time and you want something easy! It tastes like your Puerto Rican grandma did the cooking, but in a fraction of the time. Tender sliced chicken thighs are coated in a garlic + cilantro oil, simple seasonings and cooked on one sheet pan. Ingredients
- 3 lbs boneless, skinless chicken thighs, cut into ¼ inch strips
- 6 cloves garlic, minced on microplane
- ¼ cup chopped cilantro leaves
- ¾ tsp of garlic powder
- 1 ½ tsp onion powder
- ¾ tsp of dried oregano
- 1 ½ tsp of salt
- 1 tsp of ground black pepper
- ½ cup olive oil
Instructions
- Preheat oven to 375 degrees. Line a sheet pan with parchment paper.
- In a bowl and fork or with mortar and pestle, mash the garlic, cilantro, garlic powder, onion, oregano, salt and pepper. Once it is all combined, mix in the olive oil. Set aside.
- Place chicken strips in a bowl and add the garlic cilantro mixture and toss to combine.
- Spread the chicken onto the sheet pan and bake for 10-15 minutes, or until the chicken is fully cooked. You can also broil it for a few minutes if you want the chicken to get a little golden.
- Garnish with additional cilantro.
- Serve with your choice of sides.
