  • 2 ½ lbs boneless skinless chicken thighs (about 8-12 thighs)
  • 1 tsp garlic powder
  • 1 ½ tsp salt
  • ¼ tsp pepper
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter
  • 6 garlic cloves, minced
  • 1 cup chicken broth


  • Season both sides of chicken with garlic powder, salt and pepper.
  • Heat oil in a large skillet over medium heat. Place chicken in skillet with the smooth side down.
  • Press down lightly with a spatula or tongs. Cook for about 4-5 minutes until the chicken is golden and crispy.
  • Turn and press lightly to ensure all parts of the chicken are touching the pan. Cook for another 2-3 minutes until cooked through.
  • Add butter and garlic and cook for about 1 minute, until garlic is slightly golden- not browned.
  • Add broth, then turn up heat. Stir and use a spatula to scrape the golden bits stuck on the skillet.
  • Simmer for about 1 minute or until the liquid is reduced by half.
  • Remove from heat. Drizzle the sauce over the chicken and serve with your choice of sides!
