
This chicken salad uses the great combination of cilantro and lime to brighten up your typical chicken salad recipe. This is a great dish when you are craving some fresh, healthy and satisfying. You can eat it this for lunch or dinner, on a salad, as a sandwich…you name it!
Ingredients
- 1/3 cup mayonnaise
- 2 T lime juice
- ¼ tsp cumin
- ¼ tsp salt
- Pinch black pepper
- 12 oz shredded chicken
- 1 large stalk celery, small dice
- ¼ red onion, finely diced
- 2 T cilantro, chopped
Instructions
- Combine mayo, lime juice, cumin, salt and pepper together in a large bowl.
- Add the chicken, celery, red onion and cilantro to the mayo mixture and mix to combine.
