Ingredients
For the Steak:
- 1 ½ pounds skirt steak
- 1 ½ teaspoons sea salt
- 10 stems whole parsley leaves and stems
- 10 stems whole cilantro leaves and stems
- 3 tbsp red wine vinegar
- 3 large garlic cloves minced
- ½ tsp dried oregano
- ¼ tsp crushed red pepper
- ¼ tsp black pepper
- ¼ cup extra-virgin olive oil
For the Bowls
- 2 cups cooked white rice
- 1 cup sliced cucumbers
- 1 cup sliced cherry tomatoes
For the Chimichurri:
- ¼ cup coarsely chopped parsley
- ¼ cup chopped cilantro
- 3 tbsp red wine vinegar
- 1 large garlic clove minced
- ½ tsp dried oregano
- ½ tsp crushed red pepper
- ¼ tsp sea salt
- ¼ tsp black pepper
- ½ cup extra-virgin olive oil
Instructions
- In a large bowl, mix ¼ cup olive oil, 1 ½ teaspoons sea salt, 3 tbsp red wine vinegar, 3 minced garlic cloves, ½ tsp dried oregano, ¼ tsp crushed red pepper and ¼ tsp black pepper until fully combined. Add the parsely and cilantro stems. Place the skirt steak in the bowl and mix to coat.
- Allow to marinate in the refrigerator for 15 minutes while you prepare the chimichurri and other bowl components.
- For the chimichurri: Combine all the ingredients except for the oil in a small bowl. Add the olive oil and mix again. Set aside so the herbs have time to infuse the oil and allow the flavors to develop.
- To cook the steak: Heat a large skillet over high heat. Add 1 teaspoon avocado oil and then add the skirt steak without overcrowding the pan. Cook for 3-4 minutes on the first side, flip, lower the flame to medium and cook for another 1-2 minutes, or until cooked to your liking. Cooking time will vary depending on the thickness of your steak.
- Transfer the steak to a cutting board and let it rest for about 5–10 minutes before slicing.
- Slice the steak thinly into bite sized pieces against the grain. This is an important step because it helps keep each bite tender.
- Divide the rice, steak, cucumbers and tomatoes among four bowls. Drizzle with chimichurri and enjoy!
