Ingredients
  

For the Chicken

  • 1 14.5 oz can full fat coconut milk
  • ¼ cup soy sauce
  • 5 cloves garlic minced
  • 1 ½ teaspoons freshly grated ginger
  • 1 ½ teaspoons curry powder
  • 1 ½ teaspoons turmeric
  • 1 tablespoon brown sugar
  • juice from 1 lime
  • 1 ½ teaspoons salt
  • 2 lbs chicken breast tenders
  • 2 tablespoons vegetable oil

For the Slaw

  • 1 bag slaw mix
  • 1 tbsp rice vinegar
  • 1 tbsp toasted sesame oil
  • 3 tbsp coconut aminos
  • Juice from ½ lime
  • 2 tbsp avocado oil
  • 2 cloves garlic minced
  • Sea salt to taste

Instructions
 

For the Chicken:

  • In a large bowl, whisk together coconut milk, soy sauce, garlic, ginger, curry powder, turmeric, brown sugar, lime juice, and salt.
  • Add the chicken tenders and toss to coat. Let marinate for at least 20 minutes and up to 1 hour.
  • Heat 1 tbsp oil in a large skillet over medium heat.
  • Add the marinated chicken (without the marinade) and cook for 5–6 minutes per side, until golden and cooked through.

For the Slaw:

  • In a bowl, combine slaw mix, rice vinegar, sesame oil, coconut aminos, lime juice, avocado oil, garlic, and salt to taste.
  • Toss well until evenly coated. Let sit for a few minutes to soften slightly.

For the Bowls:

  • Divide the slaw and chicken among four bowls.
  • Finish with sliced cucumbers, extra lime, herbs, or a drizzle of peanut sauce if desired.
