In a medium sized bowl, add the chicken, ginger, garlic, soy sauce, mirin, rice vinegar and salt. Set aside.
Heat a large skillet over medium high heat.
Add the avocado oil and sauté the onion and half of the scallions until the onion becomes translucent, about 2 minutes.
Add the chicken mixture, stirring until combined, about 6 minutes or until chicken is no longer translucent.
Add the coleslaw mix.
Stir to combine the chicken with the coleslaw mixture about 2 minutes. Turn off the flame.
Garnish with sliced scallions.
