Ingredients
- 1 pound chicken thighs, cut into ½ inch cubes
- 1 ½ tsp minced ginger, on microplane
- 6 cloves garlic, minced on microplane
- ¼ cup soy sauce
- 1 tsp mirin, sweet rice wine
- 1 tsp rice vinegar
- ½ tsp salt
- 2 tsp avocado oil
- 1 small yellow onion, finely diced
- 2 scallions, sliced (half reserved for garnish)
- 2 cups coleslaw mix (shredded cabbage and carrots)
Instructions
- In a medium sized bowl, add the chicken, ginger, garlic, soy sauce, mirin, rice vinegar and salt. Set aside.
- Heat a large skillet over medium high heat.
- Add the avocado oil and sauté the onion and half of the scallions until the onion becomes translucent, about 2 minutes.
- Add the chicken mixture, stirring until combined, about 6 minutes or until chicken is no longer translucent.
- Add the coleslaw mix.
- Stir to combine the chicken with the coleslaw mixture about 2 minutes. Turn off the flame.
- Garnish with sliced scallions.
