Ingredients
  

  • 1 pound chicken thighs, cut into ½ inch cubes
  • 1 ½ tsp minced ginger, on microplane
  • 6 cloves garlic, minced on microplane
  • ¼ cup soy sauce
  • 1 tsp mirin, sweet rice wine
  • 1 tsp rice vinegar
  • ½ tsp salt
  • 2 tsp avocado oil
  • 1 small yellow onion, finely diced
  • 2 scallions, sliced (half reserved for garnish)
  • 2 cups coleslaw mix (shredded cabbage and carrots)

Instructions
 

  • In a medium sized bowl, add the chicken, ginger, garlic, soy sauce, mirin, rice vinegar and salt. Set aside.
  • Heat a large skillet over medium high heat.
  • Add the avocado oil and sauté the onion and half of the scallions until the onion becomes translucent, about 2 minutes.
  • Add the chicken mixture, stirring until combined, about 6 minutes or until chicken is no longer translucent.
  • Add the coleslaw mix.
  • Stir to combine the chicken with the coleslaw mixture about 2 minutes. Turn off the flame.
  • Garnish with sliced scallions.
