What is Carne Asada?
Carne Asada means “grilled meat” in Spanish, traditionally made with marinated skirt steak or flank steak. The beef is grilled to perfection, then thinly sliced and served in warm corn tortillas. It’s a staple of Mexican cuisine—and for good reason. It's bold, smoky, and irresistibly delicious.
Expert Tips for the Best Carne Asada Tacos:
Marinate longer for deeper flavor—overnight is ideal
Don’t skip resting the steak after grilling—it keeps the meat juicy
Use corn tortillas for a more authentic flavor (char them for extra smokiness)

Ingredients

For the Steak:

  • 1 ½ lbs flank steak
  • ¼ cup olive oil
  • 2 limes juiced (about 4 tablespoons juice)
  • 6 garlic cloves minced
  • ½ cup fresh cilantro chopped
  • ¾ tsp cumin powder
  • ¾ tsp chili powder
  • 1 ¼ tsp sea salt

For the Tacos:

  • ¼ cup cotija cheese
  • ½ red onion finely diced
  • 2 tbsp fresh cilantro chopped
  • 12 taco size tortillas
  • limes for garnish

Instructions

  • Whisk the oil, lime juice, garlic, cilantro, cumin, chili powder and salt in a bowl.
  • Add the steak to a glass dish and pour the marinade on top. Cover the dish with plastic wrap and marinate for 20 minutes. You can also marinate in a plastic bag.
  • In the meanwhile, prepare the toppings you want.
  • Heat a grill or cast-iron pan on medium-high heat. Add the steak (omitting the extra marinade or it will burn) and cook for 5 to 7 minutes on each side. Remove the steak to a cutting board and let it rest for another 5 minutes before slicing.
  • Slice the meat against the grain (or it will be tough) into ¼ inch thick strips.
  • Serve in tortillas of your choice along with your favorite toppings.
