Ingredients
  

For the Cucumber Avocado Salsa:

  • 1 tablespoon rice vinegar
  • 1 lime, juiced
  • 1 tablespoon honey
  • ¼ teaspoon sea salt
  • 1 clove garlic, minced
  • 2 tablespoons olive oil
  • 2 small Persian cucumbers, diced (about 1 cup)
  • 1 avocado, diced (about 1 cup)
  • 1 tablespoon chopped cilantro

For the Rice Bowl:

  • 1 Package Just Meats Carne Asada
  • 2 cups cooked white rice
  • 1 cup canned corn, drained
  • 1 lime, cut into 4 wedges, for serving
  • 2 tablespoons chopped cilantro, for garnish

Instructions
 

  • Defrost the Carne Asada in the fridge overnight, or run under hot water for a few minutes.
  • Make the salsa: In a medium-sized bowl, whisk together rice vinegar, lime juice, honey, salt, garlic and olive oil.
  • Place the diced cucumbers and avocado into the bowl and toss with dressing. Garnish with cilantro. Set aside.
  • Heat a large skillet over medium heat. Heat the carne asada according the package instructions (it will take about 2 minutes).
  • To assemble the bowls, divide the rice among four bowls. Top with corn, cucumber avocado and heated carne asada.
  • Place one lime wedge on top of each bowl and garnish with chopped cilantro.
