Preheat the oven to 350 degrees. Line a muffin tin with muffin liners.
In a blender or food processor, add all the ingreidents EXCEPT for the chocolate chips. Process until smooth, stopping to scrape down the sides and then mix again. Mix in the chocolate chips.
Scoop the batter into the lined muffin tin. Place a few chocolate chips on top of each muffin.
Bake for 12-15 minutes. Allow to cool for 5-10 minutes before eating, or they will fall apart.
Store leftovers in a covered container in the fridge or freezer.
